A washed coffee from the Halo Beriti washing station, located near Gedeb in the Gedeo Zone of southern Ethiopia, south of Yirgacheffe. Grown at 2,200 meters above sea level by approximately 1,250 smallholder Gedeo farmers on plots typically under one hectare. The variety is Ethiopian Heirloom, developed locally and by the Jimma Agricultural Research Center. After depulping, the coffee is fermented in water for up to 36 hours, then soaked for an additional 24 hours in clean spring water before drying on raised beds. Flavor profile features floral aromas, gardenia and freesia flowers, rose gum, berry taffy, sugarcane sweetness, and a herbal accent of rue.
