MOK Specialty Coffee

About This Coffee

This 100% Brazilian coffee is sourced from Fazenda Santa Clara in Mantiqueira de Minas. The Pereira family has been cultivating coffee for over a century on this 350-hectare farm at elevations between 930 and 1050 meters. Harvesting is primarily mechanical using highly sensitive tools that select only fully ripe cherries, with electrical combs used in selective areas for manual picking. After harvest, cherries are sun-dried in thin layers on patios and turned frequently to ensure maximum cup quality. The processing is natural, with direct sunlight drying methods.

MOK Specialty Coffee

Founded in 2012 by Jens Crabbe, MOK began as a small roastery and bar in Leuven before expanding to Brussels. Jens, a two time former Belgian Cup Tasters Champion, is driven by a desire to explore the full potential of coffee flavor. MOK's philosophy is centered on an omni roast approach, where they develop one ideal roast profile for each coffee that works for both filter and espresso. This method aims to showcase the coffee's inherent sweetness and terroir with maximum clarity and minimal roast influence.
