This coffee is from Finca Nejapa farm in Ahuachapán, Santa Ana region of El Salvador, produced by Gloria Rodrigues and Luis Rodrigues. The lot is called Roma and was harvested in March to April 2024. The coffee is grown at 1550 meters above sea level. The varietal is Elefante, a mix of genes between Bourbon and Ethiopian landrace discovered by the producers. Elefante is named for its large cherry size, which is substantially bigger than most varietals and produces three times more mucilage than Bourbon. The coffee is washed processed. Flavor notes include jasmine, cacao, dried mango, and champagne, with an effervescent, chocolatey character, refreshing mango finish, smooth mouthfeel, and medium body. The roast style is light to medium.
