This washed Mamut coffee is produced by Gloria Rodrigues and Luis Rodrigues on Finca Nejapa in Ahuachapán, Santa Ana, El Salvador at 1550 meters elevation. Mamut is a newly discovered varietal on the farm, characterized by large cherries. The genetics remain uncertain with lab tests showing similarities to both Catimor types and Elefante variety, which may be a mix of Ethiopian Heirloom and Bourbon. The coffee offers a rich profile with dark chocolate aroma and flavor notes of walnut and cacao bean with dried mango in the background. It has a medium to big body with a creamy mouthfeel. Harvested March to April 2025 from the Roma lot.
