This single-origin coffee is from Finca Potosi in Caicedonia, Valle del Cauca, Colombia at 1560-1835 meters elevation. Produced by Rigoberto and Luis Eduardo Herrera, it features the Sidra variety processed using the honey method. The cherries underwent 3-day anaerobic fermentation followed by depulping and 4-day fermentation with mucilage before mechanical drying. This light roast exhibits complex flavor notes of cranberry, strawberry, and red hibiscus alongside tropical mangosteen, with a creamy mouthfeel and bright acidity.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
