About This Coffee

This single origin coffee from Guatemala comes from Finca Santa Clara, located on the fertile southern slopes of the Volcán de Agua in the Antigua Valley. The farm is situated in the Sacatepequez region at 1550-1890 meters altitude. It features the Villa Sarchi varietal and is fully washed and dried on patios. The coffee is managed by Ricardo Zelaya, the 4th generation of the Zelaya family to produce coffee at Santa Clara since 1974. The farm is shade grown and uses eco-friendly processing with water recycling systems. Cherries are hand-picked by special pickers, sorted, floated, pulped, fermented for 12-14 hours, and sun-dried on patios for 12-25 days. The flavor profile includes blood orange, white flowers, and molasses.

Dutch Colony Coffee Co. was established in 2013 at Pasarbella, a rustic farmers' market in Singapore, inspired by the historical role the Dutch played in spreading coffee around the world. Co owner and Director of Coffee Suhaimie Sukiman, who entered the industry in 1998, leads a team that now spans six retail cafes, a roastery, and a barista academy with more than 70 employees. All coffee is roasted on a 35kg Loring that uses hot air technology to recirculate through a static drum, and every bean purchased scores a minimum of 85 points. The company is home to multiple national champions, including two Singapore Cup Taster title holders and medal winning roasters and latte artists, and maintains long term sourcing relationships, working with the same Colombian producer since its founding year.
