This coffee is a single origin from Imbabura, Ecuador, grown at 1515 meters elevation on Finca Soledad by producer Pepe Jijon. The Sidra variety cherries undergo a distinctive Florcita Double Honey process: 6 days cold fermentation in cherry, 2 days fermentation in mucilage in a cold room, 20 days dark room fermentation, and 10 days shade drying. Roasted to ultralight for clarity, the coffee displays lilac florals, lime citrus, peach snapple, and mango with lively acidity and creamy body.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
