The coffee is of the Chiroso variety and is processed using the traditional "cochadas" method, where cherries are collected daily, pulped, and fermented in water for 7-8 days before being fully washed and dried. This coffee offers a juicy acidity with flavor notes of sumo orange, granadilla, peach, and maple syrup sweetness.
