About This Coffee

This coffee is from the Guji region of Ethiopia, produced by Shonora Trading PLC founded by brothers Adugna and Morkata Shonora. The lot comes from the Gerba washing station involving 220 smallholder farmers. It is processed using the traditional natural method, with cherries dried on raised beds for 15-21 days. The variety is JARC 74/158, a Heirloom selection developed by the Jimma Agricultural Research Center. The coffee grows under native shade trees, developing a floral, fruity and vibrant character with mature sweetness and elegant structure.

Lucian Trapanese founded D612 Coffee Roasters in Florence in 2017 after gaining experience at several European roasters, and now runs the operation in partnership with Lorenzo Caldarelli. The roastery sources exclusively from small traceable farms, roasting specialty grade coffee multiple times per week to guarantee maximum freshness, with each package hand packed before it leaves the facility. Their roasting philosophy centers on bringing out the natural flavors of each coffee without unnecessary intervention or over roasting, an approach that has earned respect among Florence's baristas and coffee professionals. D612 supplies notable Florentine establishments including Simbiosi, Melaleuca, and Brac, building a quiet but growing presence in a city where traditional espresso culture still dominates. The roastery sees coffee as a tool of connection between farmer, roaster, and consumer, with transparency and sustainability guiding every sourcing decision.
