This coffee comes from the Huehuetenango growing region of northern Guatemala, near the border of Chiapas, Mexico. Ixban is an intentional blend of several very small farms that create a small micro-lot, combining the unique characteristics from each neighboring farm. The flavor profile features pink cotton candy, pink grapefruit, red grape, vanilla, and nectarine. It is a sweet, clean coffee with balanced acidity.
Case Coffee Roasters was founded in 2006 by Kati and Tim Case in Ashland, Oregon. The team roasts on a Diedrich IR 7 with a focus on light to medium profiles, using compostable packaging throughout. Sourcing follows a direct trade and relationship based model with an emphasis on sustainability, and USDA Organic certified coffees feature in the range.
