This coffee is from Huehuetenango, Guatemala, a highly sought-after region in the far West of the country along the Mexican border. It comes from a group of 19 woman-owned farms in the municipalities of Aldea Q'om and Canton El Plan, growing at altitudes between 1,300 and 1,800 meters. The coffee is washed processed and presents mild, delicate flavors with notes of citrus and white tea.
Aero Coffee Roasters was opened in June 2020 by Peter Femino in Northborough, Massachusetts, building on over 20 years of coffee industry experience that included founding Boston Common Coffee Co. in 2004. The 3,400 square foot space combines a production roastery, retail café, and bakery, with all coffee roasted on a Loring S70 that delivers up to 80 percent fuel savings compared to conventional machines. Head Roaster Michel Brode, a silver medallist at the 2016 Swedish National Coffee Roasting Championship, develops personalised profiles for wholesale clients. The roastery works directly with producers worldwide, prioritising transparency and fair pricing, and serves house baked pastries alongside its coffee programme.
