About This Coffee

This Pacamara microlot comes from Finca Manila, a coffee farm situated in the remote highlands of San Marcos, Nuevo Progreso in Guatemala. Grown at elevations of 1450-1800 metres above sea level, the coffee benefits from a unique microclimate where slow cherry ripening develops concentrated flavors. The Pacamara varietal is a cross between Pacas and Maragogype, known for its large beans and exceptional quality. This washed coffee displays tasting notes of Caramel Apple, Apricot, and Black Tea with a toffee aroma. The body is medium with medium to high acidity.

Russell Bailie founded Bailies in Belfast over three decades ago, building it into a cornerstone of Northern Ireland's specialty coffee industry. An in house engineering team with over 40 years of combined experience services equipment from La Marzocco, Kees van der Westen, Mahlkonig, and other major brands, making the company a full service operation for cafes, restaurants, and hotels across Ireland and the UK.
