Half-Caf Mexico is a blend combining Mexican Terruno Nayarita and Swiss Water Process Decaf Chiapas. The Nayarita features full body, sweet berry and buttery nut aromas with bright acidity, while the decaf offers delicate body and gentle sweetness. Shade-grown in communities of Huaynomota, La Yerba, Cordondel Jilguero, and El Cuarenteno at 900-1100 meters altitude. Processing includes natural, sun-dried, washed, and patio dried methods. Flavor notes include chocolate, fruit, floral, and brown sugar with fruity, floral, and nutty aromas.

Carol and Eric Blanchet established Talking Crow Coffee Roasters in 2017 in Springdale, Arkansas. The roastery specializes in single origin specialty decaf coffees, sourced exclusively through the Swiss Water Process from Guatemala, Colombia, Mexico, and Brazil, with every lot third party certified mold free. They roast on an electric fluid bed roaster, a technology chosen to minimize carbon emissions compared to traditional drum roasters. All coffee is roasted to order in small batches Monday through Friday, with nothing more than a week off roast. Both Carol and Eric hold SCA Roaster Level 1 certification. The business is independently and women owned.
