This single origin espresso is from Attikan Estate in Punajur State Forest, Karnataka, India. The Catimor variety is grown at 1550-1650 meters altitude. The beans are fermented and washed with spring water before sun drying on raised beds for 18 days. This washed process coffee offers flavor notes of hazelnuts, milk chocolate, marshmallow with a hint of blueberry finish. The roast features a low fed, extended Maillard phase approach dropped at 216°C with 20% DTR, resulting in a med-dark profile with round body, soft acidity and medium-heavy body.
Grey Soul Coffee Roasters built its identity around pour over brewing, operating cafes in Bandra West in Mumbai and Koregaon Park in Pune with a live roasting experience center. The sourcing draws on Indian specialty arabica from Karnataka, Nagaland, Sikkim, and Odisha, processed as fermented naturals, fruit naturals, and washed lots depending on the origin.
