This naturally processed coffee comes from Finca La Joya, a four-hectare farm in El Convento, Nariño, Colombia, at 2,000 meters altitude. The coffee is a blend of Caturra, Castillo, and Colombia varieties. It undergoes selective harvesting, flotation and manual sorting, then anaerobic fermentation for five days with starter culture, followed by 10 days on raised beds and 2 days in a mechanical dryer. Tasting notes include piña colada, grapefruit, and hibiscus.
