About This Coffee

This coffee is a washed Parainema variety from Santa Barbara, Honduras, produced by Yeltsin Sagastume. Grown at 1500 meters altitude and harvested in May 2025, this lot was de-pulped, fermented for 20 hours, washed carefully, and dried for 14 days on raised beds under plastic solar drying tunnels. Parainema is a native Honduran varietal created by the Honduran Coffee Institute for nematode resistance while maintaining cup quality. The Sagastume family has been involved in coffee production in Santa Barbara for over a century, using no chemical fertilizers or pesticides. This coffee features crisp citrus aromas with notes of caramel and redcurrant, delivering a fresh and bright profile with aromatic citrus balanced by intense caramel sweetness.
