This is a classic blend sourced from El Salvador, Guatemala, and Mexico. The coffee uses various varieties and combines honey and washed processing methods. It features robust sweetness with a creamy chocolate texture. The flavor profile includes peanuts, chocolate, stone fruit, and orange blossom. Designed to be balanced, rich, and sweet, it is suitable for all kinds of brew methods.
Cathedral Coffee was founded in 2013 in Portland, Oregon by Austen Tanner, Nate Dillon, and Matthieu Galizia. The team brought roasting in house in early 2022, starting with a 3 kilo Mill City Roasters machine before doubling capacity with a 6 kilo Giesen at their Saint Helens roastery midway between Portland and Scappoose. All coffee is roasted fresh on Tuesdays and Wednesdays and shipped weekly on Thursdays, with an ever rotating single origin lineup sourced ethically and transparently. The business now runs three café locations across North Portland, Scappoose, and Lake Oswego, and has been featured in Portland Monthly's guide to the city's best independent coffee shops.
