This decaffeinated coffee from the Caldas region of Colombia features sweet and balanced chocolate, caramel, and banana notes. It has a well-integrated medium acidity and a very round body. The coffee is sourced through importer OPCE and uses higher-altitude coffees with higher acidity to offset the characteristic sweetness of decaffeinated coffee. An experimental batch was made with a specific threshing process for decaffeination, resulting in a cleaner and more pleasant coffee. During 2024, the coffee was dried in mechanical silos after the decaffeination process to better stabilize it, extend shelf life, and create a more expressive cup.
