This coffee is from the Tarrazú region in Costa Rica, which benefits from a unique micro-climate influenced by the proximity of the Irazú volcano and the sea. The coffee is grown without pesticides or fertilizers, with weeding done by hand during the productive season. The cherries are picked and sorted by hand, resulting in naturally sweet and juicy fruit. The processing uses yeast washed fermentation, a strictly controlled natural fermentation process utilizing microorganisms found on the surface and near the stones of the cherries. A small percentage (0-10%) of the pulp is intentionally left on the beans to help fermentation naturally.
Spojka Roastery was founded in December 2022 in Prešov, filling a gap for a dedicated specialty roastery in eastern Slovakia. Head roaster and owner Viktor Štefančík is a former barista who regularly represented Prešov coffee shops at the Slovak national championship and competed at the world level, bringing that competition trained palate to his selection and roasting of green coffee. The team targets coffees scoring around 85 points on the SCAA scale and has been steadily sourcing higher scored lots as the operation grows. Their modern cafe near the Torysa river doubles as a roasting space where visitors can watch the process, taste the results, and take packets of freshly roasted beans home.
