This coffee is from the Gatsibo region in eastern Rwanda, processed at the Humure Washing Station operated by Baho Coffee. The station is run entirely by a women's team and is named after the highest hill in the area. Small farmers deliver coffee cherries from their small plots where coffee grows alongside corn and potatoes. The Red Bourbon variety is hand-picked at peak ripeness, sorted by hand at home, and re-sorted at the station before being tested for density. Selected cherries are spread on raised African beds and dried using a slow-drying method inspired by slow cooking principles, taking an average of 47 days - exceptionally long for natural processing. This extended drying process develops pronounced sweetness, juicy fruit tones, and long aftertaste. Flavor notes include wild strawberries, fig jam, and baked tea, creating a full, sweet body with a light fermentation spark.
Opened at the end of 2021 in České Budějovice by a group of friends, they roast on a 15kg Giesen machine in an open space roastery with espresso bar, featuring flowery herbarium like packaging that represents the flavor profiles. Head roaster Petr brings years of experience. Their coffee is known for floral and fruity notes, and they've opened their first espresso bar at Budějovice train station. The team values diversity in coffee, rejecting the notion of one right taste.
