This coffee is from the Ibisi washing station located in the mountain hills of Southern Rwanda, near Nyungwe Forest. The region is Ibis Bya Huya Mountain at 1700 meters altitude. The variety is Red Bourbon and it is fully washed processed. Cherry is floated, pulped, and fermented before being washed in grading channels to separate denser beans. The coffee is skin dried under shade netting for 1-2 days, then transferred to raised beds in sunshine for 15-22 days. Flavor profile includes stone fruit, honey, black tea, milk chocolate, hazelnut, and praline notes.
