About This Coffee

This coffee is from the Idido processing station in the Yirgacheffe region of Ethiopia at 2000 meters altitude. It is an Anoxic Natural processed coffee made from wild Ethiopian Heirloom varieties. The coffee undergoes extended anoxic fermentation with commercial yeast cultures for around two days, then is dried on raised beds for up to 21 days. The flavor profile features tropical fruit notes of ripe guava, macerated strawberries, and delicate floral notes reminiscent of parma violets.
