It undergoes a unique monsoon drying process where beans are harvested and dried during the monsoon period, then moved to a drier location for long-term storage. Over 12-16 weeks, the beans absorb moisture at different stages, change to a golden color, and nearly double in size. The flavor profile is earthy, smoky, with tobacco and spice notes and a full body.
