This coffee is produced by Mr. Ashok Patre at the Ratnagiri Estate near Chikmagalur, India. The SLN 9 variety undergoes a unique 42-hour anaerobic fermentation using lab-cultivated microbes, followed by a 6-hour vacuum environment treatment and 19 days of drying on raised beds. This meticulous process results in a dense, complex cup with notes of goji berry, deep brown sugar, and a lingering cacao finish. It is a rich and layered coffee that showcases advanced processing techniques.
Launched in 2025 as a project by The Roasters Pack, Coffee Wallas is an Asian owned Toronto roastery dedicated to spotlighting specialty coffee from across Asia.
