About This Coffee

A single-origin coffee from the Pegasing region of Indonesia, produced by Hendra and his family (Hendra & rodina) at the Team Pegasing station. Grown at 1,300–1,500 meters altitude, this coffee features Tim Tim (Hybrido de Timor) and Gayo 1 varieties. Processed using carbonic maceration — fermented 70–80 hours in sealed tanks with CO2, then dried on raised beds for 20–25 days. Flavor notes include kombucha, cascara, and cacao nibs. Suitable for all filter brewing methods.

RepublicThis Ostrava based family roastery was founded in 2017 by husband and wife duo Petr and Marie, who previously worked as baristas at Berlin's Five Elephant cafe. What started as a small family business with dad roasting and mom tasting while the kids watched has grown to a team of over 10 people with a Prague showroom opening in Bubenč. They roast on an American made five pound Diedrich IR-5 roaster with quality as their number one priority, offering regularly rotating harvests from around the world. Their Mothership espresso blend has become beloved by baristas and home enthusiasts for its full creamy body and milk chocolate flavor.
