Jaén is a specialty coffee from the Cajamarca region of Peru, grown at an altitude of 2750 meters. This mixed variety lot, featuring Bourbon, Caturra, Catuaí, Pache, and Catimor, is processed using a washed method with an extended 30 to 40-hour fermentation. The cup offers a balanced and smooth profile with distinct notes of citrus, caramel, milk chocolate, and brown sugar. It is characterized by a heavy, dessert-like foundation and is well-suited for pour-over brewing.
As one of Lisbon's pioneering specialty coffee roasters, Fabrica was founded with the vision of bringing the entire coffee process under one roof. They were among the first in the city to roast in-house, creating vibrant community hubs where customers could see the journey from green bean to cup. Their philosophy centers on making high-quality, freshly roasted coffee an integral part of the daily urban experience.
