This coffee is from Finca Santa Mónica in Armenia, Quindio, Colombia, produced by Jairo Arcila at 1500 meters altitude. The Castillo variety cherries are picked at peak ripeness, pulped, and placed in sealed plastic bags for extended anaerobic fermentation with mucilage alongside a mixture of honey and dried, powdered dragonfruit. After fermentation, the coffee is dried on raised beds. This co-ferment process results in intensely aromatic and wildly flavorful coffee with notes of sour candy, cherry popsicles, purple flowers, and hibiscus tea.
