This is a single-origin coffee from Java with a cupping score of 88 points. Processed using the natural method, fully ripe cherries are pulped to retain 70% of mucilage before being sun-dried for 21 to 28 days until moisture content drops below 12%. After resting for two months, the beans are hulled and sorted by size, density, and hand-sorted for quality. The coffee features passionfruit and crisp red apple notes, complemented by a delicate violet floral note, with a bright and juicy finish.
Monks Coffee Roasters was founded in August 2016 by Patrick Abbott, an Irishman who spent twenty five years in Australia before bringing his deep coffee passion to Amsterdam's Oud West neighborhood. The search for the perfect space took Patrick more than eighteen months, a testament to his vision and commitment to finding the right environment for his roastery. Since opening, Monks has become a local institution known for its welcoming atmosphere and consistently excellent brews. The roastery stands out through its sustainability practices, including eliminating single use plastics and delivering products via electric bicycle.
