About This Coffee

This coffee is from Jhonatan Gasca's Zarza farm in Bruselas, Pitalito, Colombia, grown at 1500-1800 meters above sea level. The variety is Bourbon Ají, a relatively new variety in Huila with likely Ethiopian lineage, named for its pepper-like cherry shape. The processing involves hand-selecting ripe cherries, followed by a 12-hour oxidation, depulping, then 48-hour submerged fermentation at 28°C with mosto recirculation using the coffee cherries' own juice as a nutrient-rich starter. The coffee is sun dried under canopy for 10-12 days.
