About This Coffee

This single-origin coffee is produced by Jhonatan Gasca, a second-generation producer from Pitalito, Huila, Colombia at the Zarza farm in the Bruselas region. The coffee is grown at 1500-1800 meters above sea level. The variety is Bourbon Ají, named for its pepper-like shape, with heritage likely traced to Ethiopian lineage. Ripe cherries undergo an initial 12-hour oxidation before being depulped and undergoing submerged fermentation at 28°C for 48 hours with mosto recirculation. The mosto, made from the coffee cherries' own juice, provides nutrients and enzymes for clarity and flavor saturation. The coffee is sun dried under canopy for 10-12 days.
