This coffee is a Colombian microlot from producer José Elcias Martinez. The beans are the Tabi variety, a cross between Typica and Bourbon developed in Colombia. It is a washed coffee sourced by Osito. The coffee displays a typica-esque profile with deeply refined citrus acidity, floral notes, and complex candy bar sweetness. Tasting notes include clementine and orange with a melon and honeydew character, finishing with milk chocolate and salted caramel.

Botz Coffee

Botz Coffee was founded in February 2020 by Danny Falloon in Whiting, Indiana, with the name taken from his childhood nickname, short for brother in Serbian. Falloon experiments with profiles on an Ikawa V3 sample roaster before scaling to production on a modified Buckeye BC 5, and performs all cupping on a refurbished childhood kitchen table painted in the brand's signature pink. The roastery buys ethically sourced green coffee in small quantities, consolidating shipments to minimise its carbon footprint and composting grounds from the weekend tasting room. The range focuses on small lot, seasonal single origin coffees with creative roast profiles, available through the website, the weekend tasting room on Clark Street, and a selective wholesale programme.
