This coffee is from Huila, Colombia, grown at 1,850 meters altitude. It features a blend of Caturra, Castillo, and Pink Bourbon varieties. The lot is processed with 24-hour fermentation in cherry followed by 60-hour anaerobic fermentation, then dried in a marquesina for 15 days. The coffee displays champagne grape-like sweetness balanced with Honeycrisp and apple donut fruit qualities.

Regalia Coffee

Paolo and Chisato Malikski co founded Regalia Coffee in 2018 in Long Island City, Queens, building on work Paolo began in 2017 alongside coffee expert Scott Rao at the original Multimodal roasting facility. Paolo, a classical musician turned roaster and international roasting instructor, brings a meticulous ear for nuance to every batch. Regalia now operates from a 7,000 square foot facility called Multimodal, equipped with a Diedrich IR5, Mill City Roasters, and a Probat P25/2, serving both their own production and other roasters through shared access and toll roasting services. Their mission centers on lowering barriers to entry in the coffee industry while maintaining fair, sustainable sourcing practices. The roastery earned Gold at the 2025 Global Coffee Awards in the Filter/Experimental category.
