This coffee is a Sidra variety from the San Agustín region of Huila, Colombia, grown at an altitude of 1900 to 2000 meters. It undergoes a dry-fermented washed process, where cherries are fermented in a wooden hopper before and after de-pulping, followed by a four-stage wash and 18 days of drying on raised beds. The flavor profile is juicy and complex, featuring notes of elderflower syrup, lime zest, and hints of tropical fruits. This coffee is roasted specifically for filter brewing methods.
