This Hawaiian coffee originates from the South Point farm in Kau district on Hawaii's Big Island, located at 600-640 meters elevation. The Yellow Caturra variety is cultivated in the region's cool, misty environment for excellent acidity and productivity. The beans are washed processed with pulping, overnight fermentation, water soaking, and drying on elevated screens. Peaberry selection results from the coffee cherry producing a single round seed instead of two flat seeds, creating uniform roasting characteristics. Flavor profile includes bright citrus notes, brown sugar, lemon, caramel, and grapefruit with clean acidity.
