This washed coffee originates from Thuti Factory in Gatugi, Nyeri County, Kenya, produced by Othaya Farmers Cooperative Society. Grown at 1700-1800 meters altitude on volcanic red loamy soil, it features SL28, SL34, Ruiru, and Batian varieties. The beans were harvested between November 2023 and February 2024. Processing involves 16-hour dry fermentation with a 6-hour soaking, followed by drying on raised beds for 14-20 days to 10.5% moisture. Light roasted, the coffee displays notes of hibiscus, red plum, and raspberry.
Hedge Coffee was founded in 2015 in San Francisco by Olga and Alex Sobal, starting as a mobile specialty coffee catering company before establishing a permanent location in the Mission District. The couple brought roasting in house in 2020, sourcing green coffees through importers while building direct relationships with producers where possible.
