This coffee is produced by the Konga cooperative in the Yirgacheffe region of Ethiopia, part of the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU). The cooperative has 2,400 smallholder members who carefully process their coffee with meticulous attention to detail. The coffee is made from Ethiopian heirloom varietals, hand-sorted for ripeness, pulped, and wet fermented for 24 to 36 hours. After fermentation, the beans are washed and dried on cloth drying beds for one to two weeks. The cooperative is known for its community support, having recently renovated a local primary school.
