This is a natural-processed Sidra variety coffee from Frank Torres at La Indonesia farm in Nariño, Colombia, grown at 1,750 meters altitude. The coffee is light roasted and features a sweet, delicate profile with tasting notes of grapefruit, honey, cocoa, and melon. The natural processing involved harvesting cherries at 22 degrees Brix, fermenting for 100-120 hours in tanks, and drying on raised beds and patios to 10-11% humidity.
The Artery Community Roasters is a social enterprise based in Ottawa, Ontario, employing people living with disabilities at living wages. They roast in small batches on a Coffee Crafters Artisan XL with a capacity of up to 10 pounds per roast, and ship within one week of roasting. Sourcing is done on a direct trade basis, maintaining one to two degrees of separation from the farmers. The Artery was named Coffee Roaster of the Month by Commonly Coffee.
