This single origin decaf coffee is from Pitalito, Huila, Colombia, grown at altitudes between 1500-1750 meters above sea level. It represents the work of over 50 producers committed to quality and excellence. The coffee features Colombia, Caturra, and Castillo varieties. It is fully washed and then decaffeinated using the Natural EA (Ethyl Acetate) process at the Descafecol plant in Manizales, which uses ethyl acetate derived 100% from sugar cane mixed with mountain water to remove 99.7% of caffeine while preserving original flavors and adding fruity notes. The coffee is carefully hand-sorted and processed at individual farms with special attention to the drying process for consistency and clean cup profile. Flavor notes include butterscotch, apple pie, and honeycomb. Medium roast prepared for espresso brewing.
Established in 2007 by Mark Dundon and Bridget Amor, Seven Seeds was created to embody the ideals of exceptional and transparent coffee.A pioneer in Melbourne's coffee scene, the company's name honors the story of Baba Budan, who smuggled seven coffee seeds from Yemen, breaking the Arabic world's cultivation monopoly. Their approach is founded on transparency, and since 2018, they have published the "farmgate" price they pay directly to producers. They focus on building partnerships with producers, whom they see as professional colleagues.
