About This Coffee

This is a balanced espresso blend from Brazil and Colombia, roasted to bridge light and dark styles with emphasis on caramelized aromas and subtle acidity. The Brazilian component is from Fazenda Matão in Mococa, Mogiana region at 810-1100 meters, owned by Marco Antonio Guardabaxo. Seven varieties are grown (Acaia, Mundo Novo, Catuai, Catucai, Obatã, Arara, Rubi) and processed as natural, pulped natural, or honey. The Colombian component is from Cooperativa de Cafeteros Garzon Dorado in Huila, Garzon at 1600 meters average elevation. This cooperative of 86 farmers grows Caturra and Colombia varieties, washed processed with 20 hours fermentation in cherries and 26 hours in GrainPro bags, followed by 15-18 days sun-drying on raised beds.

Tim & Sebastian's is a specialty roastery near Cologne, Germany, built on the idea that exceptional coffee should be both carefully made and accessible. Sebastian, the Röstmeister, learned his craft on a 50 year old roaster with minimal controls, developing his palate and technique through manual note taking and sensory evaluation. He later trained at the Berlin School of Coffee and holds an SCA Barista Intermediate certification. The roastery works in small batches with beans from worldwide origins, and several of their offerings carry organic certification. Their range spans espresso, filter, and fully automatic machine lines, each named after people close to the founders. The guiding philosophy is straightforward: select carefully, roast well, deliver fresh, and keep good coffee within reach.
