This coffee is sourced from the Amoju co-operative in the Cajamarca region of Peru, grown by smallholder farmers at an altitude of 1,800 to 2,000 meters. It is a blend of Bourbon, Catuai, and Catimor varieties, processed using a washed method where cherries are depulped, fermented for 30 hours, and dried on elevated platforms. The flavor profile features notes of orange, walnuts, and brown sugar. This medium-light roast is designed to highlight the regional characteristics of Cajamarca while developing sweetness and body.
