This Pink Bourbon coffee is grown in Palestina, southern Huila, Colombia, at elevations between 1730 and 1790 meters. Producer Efren Echeverry Ortega cultivates this 2.7-hectare farm combining family heritage with innovation and sustainability. The lot undergoes complex natural anaerobic fermentation lasting 190 hours, with cherries sealed in fermentation barrels with fruit sugar solutions for controlled microbial activity. The coffee is then dried slowly for 24 to 28 days on raised canopy beds. The cup profile features strawberry, raspberry, mango, and pineapple, with a soft base of caramel and honey. The finish is long and spiced with hints of cinnamon and nutmeg. The acidity is winey and refreshing, the sweetness recalls syrup, and the mouthfeel is silky.
