About This Coffee

This coffee from Nueva Segovia, Nicaragua, consists of lots from three family-owned farms: El Avion, Los Pirineos, and La Bendición. The coffee is processed at Bridazul using Carbonic Maceration Natural method. Grown at high altitude where cherries ripen slowly in cool mountain air, each cherry is hand-picked when perfectly ripe. The carbonic maceration process, inspired by winemaking, allows the coffee cherries to ferment with the fruit intact in a controlled, oxygen-free environment. This creates intense fruitiness, round body, and smooth sweetness while preserving clean and lively tones. The flavor profile includes ripe red berries (cherry and raspberry), citrus notes, smooth honey sweetness, round body with cashew and elegant milk chocolate, and a long, clean, elegant finish.
