This is a decaf coffee produced by Finca El Paraiso in Cauca, Colombia at 1930 meters altitude. The producer is Alex Bermudez. The coffee is made from Castillo variety cherries harvested in 2025. It undergoes an experimental thermal shock processing method with Saccharomyces cerevisiae fermentation, followed by sugarcane-derived ethyl acetate decaffeination. The coffee has a sweet profile with notes of Swedish Berries (red candies), Raspberry, and Cherry, featuring a silky body and long sweet finish.
