This is an exceptional single-origin coffee from Oscar Hernandez and Los Nogales farm in Bruxelles, Huila, Colombia. Grown at 1900 meters altitude in the Pulpito lot, this Typica variety undergoes an innovative processing method called Thermal Fusion—cherries are bathed in 90°C water for 60 seconds, followed by 7 days of anaerobic fermentation with added pre-fermented Typica yeast culture. The coffee is then dried on raised beds for 15 days. This experimental processing creates intensely aromatic profiles. Roasted fast and light to highlight the variety's complexities without overpowering sweetness or body.
