This coffee is a single origin from Colombia, specifically from Los Nogales farm in the Pitalito region of Huila. Grown at an altitude of 1870-2000 meters above sea level, it is made from the Typica CH53 variety. The coffee undergoes an extra washed process, involving selective hand-picking, density-based flotation, pasteurization, dry pulping, 7-day fermentation with pre-fermented yeast, and 15 days of sun-drying. The roaster recommends this coffee for both filter and espresso brewing methods.
Based in Zürich, AILA was founded with the mission to build a complete coffee culture rather than just a roastery. They are deeply committed to direct trade, fostering strong relationships with their producers to ensure quality and fairness. Their roasting approach is designed to tell the story of the beans and the people behind them.
