TIM & SEBASTIAN'S

About This Coffee

This coffee comes from Fazenda Aliança in Brazil's Mogiana region, located at altitudes between 850 and 1100 meters. The farm spans 1400 hectares with 200 hectares dedicated to coffee cultivation, producing approximately 8000 bags annually. The coffee is primarily Catuai variety, characteristic of sweet and fruity notes typical of this cultivar. The farm has records dating back to 1882 and was acquired by Renato Ishikawa in 1986, who modernized production methods while maintaining over 100 years of tradition. The operation emphasizes sustainability with careful monitoring of natural resources, preservation of native flora and fauna, and wastewater treatment and recycling. This light roast coffee can also be used for espresso brewing for those who prefer very light roasts.

TIM & SEBASTIAN'S

Tim & Sebastian's is a specialty roastery near Cologne, Germany, built on the idea that exceptional coffee should be both carefully made and accessible. Sebastian, the Röstmeister, learned his craft on a 50 year old roaster with minimal controls, developing his palate and technique through manual note taking and sensory evaluation. He later trained at the Berlin School of Coffee and holds an SCA Barista Intermediate certification. The roastery works in small batches with beans from worldwide origins, and several of their offerings carry organic certification. Their range spans espresso, filter, and fully automatic machine lines, each named after people close to the founders. The guiding philosophy is straightforward: select carefully, roast well, deliver fresh, and keep good coffee within reach.
