This Nicaraguan coffee comes from sisters Martha and Ana Maria Albir and their farm Finca Bethania in the Nueva Segovia region. The 60 Hectare farm is Rainforest Alliance certified and has been in the family since the 1930s. This particular lot is a Maracaturra variety, a natural cross between Maragogype and Caturra, high-yielding varieties from Brazil. The coffee is processed at Cafetos de Segovia, where cherry is selectively handpicked, pulped, fermented for 36 hours, washed, and dried on raised beds for approximately 17 days.
