This coffee is sourced from 30 small-scale producers in the Matambo project in Gigante, Huila, Colombia. Grown at altitudes between 1500-1900 meters, the coffee benefits from steep mountains, cool winds and distinct light conditions that create ideal microclimates for slow cherry maturation. The coffee features Caturra, Colombia, and Castillo varieties and is fully washed processed. Sourced through Caravela partners, this is Seven Seeds' ninth year purchasing this benchmark Huila coffee. The cup profile is silky, clean and composed with notes of honeycomb, malt, and cherry cola.
