This coffee is sourced from smallholder farmers in Mexico's southernmost state of Chiapas, grown along the Sierra Madre de Chiapas at 1,200-1,600 meters altitude. The beans are processed using the traditional washed method, where cherries are pulped, fermented, and rinsed before being dried on patios or raised beds. Expertly roasted to a medium profile, this coffee presents tasting notes of dark chocolate and almond, layered with brown sugar sweetness and raisin-like depth, finishing with a bright hint of green apple. The coffee reflects the region's deep-rooted tradition, with fertile volcanic soils and shade of dense forest canopies contributing to its chocolate-forward character with balanced sweetness and gentle fruit complexity.
