Mexico Chiapas is a medium roast coffee grown in Mexico's southernmost state at altitudes between 900 and 1,100 meters. The beans are washed and sun-dried. This coffee features soft nutty notes, dark chocolate, and sweet characteristics with mild acidity and a clean finish, sharing similar character with Guatemala's Huehuetenango region.

Amy and Scott Angelo founded Oceana Coffee Roasters in Tequesta, Florida in 2009, beginning with a DIY popcorn maker before evolving their equipment as the operation expanded. A 7 kilogram Diedrich in 2011 provided their first purpose built roaster, and today they operate a Giesen roaster that enables greater production capacity and precision. Scott holds certification as an Arabica Q Grader and maintains 15 year relationships with brokers and farms, sourcing exclusively from the top 5 percent of coffees worldwide. Recognition includes a Silver Medal at the Golden Bean World Series and Scotts selection as Overall Best Roaster at the 2016 Golden Bean North America competition, acknowledging the roasterys pursuit of excellence.
